Garlic fondue to keep the vampires at bay!

 

A traditional Swiss cheese fondue that is guaranteed to keep vampires (and mothers-in-law) at arm's length!!

Garlic Cheese Fondue Ingredients

1 lb (or 450g) Swiss cheese, grated
1/2 lb Gruyere cheese, grated
1+ 1/4 cups dry white wine
3 tablespoons all purpose flour
3 large cloves garlic (fresh is best but whatever you've got is OK), crushed (or very, VERY finely chopped)
1 teaspoon nutmeg, ground
1/2 teaspoon white pepper, ground
French bread or sourdough loaf cut into 2 inch cubes, vegetable crudités etc for spearing and dipping.

Garlic Cheese Fondue Directions

Into a large bowl, add both cheese varieties, the nutmeg and the white pepper.
Toss to coat and mix well.
In a large saucepan over a low heat, add 1 cup of the white wine and the garlic.
When simmering gently, add the cheese mixture a little at a time, whisking all the while and ensuring the mixture has melted and is smooth before adding more each time.
If the mixture is too thick, add a tablespoonful of wine at a time, mixing well after each addition until the fondue is the desired consistency.
Carefully pour the fondue into a fondue pot over a burner.
Serve with skewered bread & crudités.
